This is a yummy fresh salad to highlight spring and summer’s bounty! And with the addition of the Arabelle Dilled Onions, it is perfect on its own or as an accompaniment to pork or chicken or any fresh grilled seafood. It is also a great late afternoon snack on a hot day or a first course for dinner with friends!

Prep Time: 15 minutes
Serves 8-10

Ingredients*:
4-5 medium sized cucumbers, halved lengthwise and chopped
½ -1 jar of the Arabelle Dilled Onions, to taste
¾ cup curly parsley, finely chopped
1½ tsp salt
1 tsp black pepper
¼ tsp garlic powder

Marinade/Dressing:
1 tsp sugar**
½ cup Arabelle Dilled Onion juice
½ cup EV olive oil

Directions:
Whisk sugar into Dilled Onion juice until dissolved. Gradually whisk in oil until emulsified. Set aside. Combine all the other ingredients and slowly pour the marinade it. Mix it all together very well. Refrigerate for at least an hour and up to overnight before serving.

*You can also add 2-3 fresh tomatoes, chopped, if you would like. Adjust Dilled Onions closer to a whole jar according to taste.
**If salad is too acidic, you can add up to another tsp of sugar to taste.
